So...let me first get it out of the way that much of this has been done for me already--namely the actual damage testing:

However, these are damages per shot, as opposed to taking rate of fire into account, so I plan to do that.

First of all, here's some approximate rate of fire data I collected (some of these may be off by 5% or so, but it should be reasonably accurate:

Scout scattergun: 3:60, 3:71 (for 6 shots) -- 0:60 per shot?
Scout bat: 5:04, 5:19 (for 10 shots) -- 0:50 per shot?
Scout pistol: 3:13, 3:16 (for 12 shots) -- 0:25 per shot?

Soldier Rocket launcher: 3:09, 3:14 (for 4 shots) -- 0:75 per shot? (40 damage of recoil)
Soldier shovel: 7:58, 7:42, 7:59 (for 10 shots) -- 0:75 per shot?
Soldier Shotgun: 3:80, 3:63 (for 6 shots) -- 0:60 per shot?

Pyro Flamethrower: 16:50, 16:49 (for 200 ammo) -- 0:08 per shot?
Pyro Shotgun: 3:78, 3:54 (for 6 ammo) -- 0:60 per shot?
Pyro Axe: 7:68, 7:87 (for 10 shots) -- 0:75 per shot?

Demo grenades: 2:26, 2:17 (for 4 shots) -- 0:55 per shot?
Demo stickies: 5:99, 5:53, 5:61 (for 8 shots) -- 0:75 per shot?
Demo Bottle: 7:55 (for 10 shots) -- 0:75 per shot?

Heavy minigun: 21:07, 20:68 (for 200 ammo) -- 0:10 per ammo?
Heavy Shotgun: 3:57 (for 6 ammo) 0:60 per shot?
Heavy Fists: 7:59 (for 10 shots) 0:75 per shot?

Engineer Shotgun: 3:48, 3:63 (for 6 shots) 0:60 per shot?
Engineer Pistol: 3:01 (for 12 shots) -- 0:25 per shot?
Engineer wrench: 7:75 (for 10 shots) -- 0:75 per shot?

Medic Needlegun: 4:29, 4:44, 4:41 (for 40 shots) -- 0:11 per shot?
Medic Saw: 7:82, 7:67 (for 10 shots) -- 0:75 per shot?

Sniper rifle: 36:42, 36:79 (for 25 shots scoped and unscoped, reload included since it happens after every shot) -- 1:50 per shot?
Spiper Machine pistol: 2:96, 2:93 (for 25 shots) -- 0:12 per shot?
Sniper knife: 7:64 (for 10 shots) -- 0:75 per shot?

Spy Gun: 2:96, 2:94 (for 6 shots) -- 0:50 per shot?
Spy Knife: 7:65 (for 10 shots) -- 0:75 per shot?

Also, I'm going to assume point blank range, since otherwise melee weapons wouldn't work, and this is a DL stat topic after all. I'll also assume one turn is one second.

Damage:
Scattergun: 158 (LONG reload time)
Pistol: 84
Baseball Bat: 75 (doesn't require reloading or ammo)

Damage:
Rocket Launcher: 147 (LONG reload time, at point blank hurts the Soldier as well--about 50 damage for every 150 dealt).
Shotgun: 142 (LONG reload time)
Shovel: 87

Pyro
HP: 175 (Immune to being set on fire)

Damage:
Flamethrower: 187 and causes "on fire" status (basically poison that deals about 50 damage, though obstructs vision a bit too).
Shotgun: 142 (LONG reload time)
Fire Axe: 87

Demoman (Meet the Demoman: http://www.youtube.com/watch?v=rNM4eFsX68Y)
HP: 175

Damage:
Grenade Launcher: 173 (These explode on impact with a player, but if they get dodged then they're pretty useless. LONG reload time)
Sticky Bomb: 153 (These get stuck to the ground, and don't detonate until you press the right mouse button. Great at taking out stationary people who can heal, since you can stick 8 of them then trigger them all at once. They do take half a second to arm, though, so someone good at dodging can avoid them).
Bottle: 87

HP: 300

Damage:
Minigun (Sasha): 575 (This takes a second or so of windup time; you can walk around with it always spinning, but this makes you walk at less than half your normal speed).
Shotgun: 142 (LONG reload time)
Fists: 87

HP: 125

Shotgun: 142 (LONG reload time)
Pistol: 84
Wrench: 87

Medic
HP: 150 (Also has a slow regen, but it's like 2-3 HP per second)

Sniper

Sniper Rifle: 34 (charged non-headhsot; headshot damage not known, but probably around 100)
Machine Pistol: 92
Machete: 87

The Sniper's saving grace is that headshots with the Sniper Rifle deal significantly more damage; unfortunately it's not known how much more damage.

Spy
HP: 125

Revolver: 115
Knife: 53 (and realistically lower than that, because it's the only weapon that can't crit).

The Spy's saving grace is that stabs in the back with the knife are instant death, and he can go invisible to help this happen. Unlike Sniper I doubt this will matter, though, since in a duel you can use "back facing a corner".

Heavy's kinda curve breaking there (making everyone else average or below >_>)
