In no particular order... note that I'm only putting down mains of games I played long/seriously enough to have mains in. I tend to like my characters to be solid or offense focused, but with exceptions.

Super Street Fighter 2 Turbo: Either Ryu or O. Sagat.
Vampire Savior[aka Darkstalkers 3]: Hsien-ko.
Dissidia: Jecht, Firion.
Tatsunoko vs Capcom: While I was playing I mained Soki/Tekkaman Blade team.
Guilty Gear XX Accent Core: Order-Sol.
Blazblue Continuum Shift: Ragna.
King of Fighters 98: Leona/Mary, Vice, Takuma.
King of Fighters 2002 Unlimited Match: Terry, Kasumi, EX Takuma.
Real Bout Fatal Fury 2: Geese Howard.
Garou: Kushnood Butt.
Melty Blood Act Cadenza: Waffled between Kouma and Hisui.
Melty Blood Actress Again: Full Moon Arcueid.
Touhou Suimusou[IaMP]: Youmu.
Touhou Hisouten[and Soku]: Youmu.

As far as mains go, I really don't have a lot myself.  I like to be "kind of good with a lot of characters" rather than "really good with one character".  I tend to pick unpopular/low tier characters.  It's more fun when you humiliate your opponents with them.

Street Fighter 2:  Honda, mainly because I love his normals.
Mortal Kombat:  Johnny Cage
Art of Fighting 2:  John Crawley
